Researcher Dr Jason Fung has many videos on YouTube about the advantages of weight loss for diabetes. They’re accessible to everyone with a phone, and they’re educational and helpful. This week I learned all about how sugar can harm the body. According to researchers like Jason Fung it harms the body because it increases insulin so much and the body can’t cope.
If you are overweight, losing weight is one of the most important things that you can do to help manage your diabetes. Even losing a small amount of weight will help, and will also reduce your risk of heart disease and other chronic diseases.
Dr Fung’s suggestion is to eat lots and lots of fruits and vegetables and to have many of your snacks fruit and veg too.
My snack this morning was mandarins and pickled onions—both healthy, cheap and high fibre.
Recipe for picked onions
1 litre apple cider vinegar
2kg little onions
250g sugar
Spices to taste (I use whole all spice, whole cloves, chilli powder and whole pepper).
Salt to taste (I add about 1 tablespoon per batch).
Instructions
Divide evenly between glass or terracotta jars and cook in oven until onions are soft and delicious.
Start the oven cold when they go in so that the glass jars don’t crack.
Makes a tart recipe – if it’s too tart for you, adjust sugar (in moderation) to taste.
